Ripe plantain (Yellow with some Black Spots),
Thinly slice plantains diagonally
Heat oil until hot but not smoking
Deep fry the plantain until golden brown, about 3 minutes
Remove with slotted ladle and place in pan with paper towels to absorb excess oil.
Salt to taste
Can be eaten as is or be served warm over tomato stew.
Tomato Stew for Fried Plantains (Meatless)
1 Cup Vegetable Oil
1 lb. Ripe Tomatoes - ground
1 Large Onion - finely chopped
2 sliced tomatoes
2 tbsp Tomato Puree
½ tbsp African Red Pepper
Tomato Paste (may be needed)
Sauté onion in oil and add tomatoes.
Add the rest of the ingredients and simmer for 30 minutes.
Serve over fried plantains
