RECIPES - Fried Plantain and Stew

 

Ingredients

2 ripe plantain, thinly sliced diagonally

Vegetable oil

Salt to taste

Directions

1. Heat oil until hot but not smoking

2. Deep fat fry the plantain until golden brown, about 3 minutes

3. Remove with slotted ladle. Transfer to paper towel to absorb excess oil.

4. Serve warm over stew. Serves 6

Tomato stew for fried plantains (Meatless)

Ingredients

1 cup vegetable oil

1 lb ripe tomatoes, ground

1 large onion, finely chopped

2 sliced tomatoes

2 tbsp tomato puree

˝ tbsp African red pepper

(May need tomato paste)

Directions

1. Sauté onion and add tomatoes.

2. Add the rest of the ingredients and simmer for 30 minutes.

3. Serve over fried plantains.
