cut meat in bite-size pieces. Precooked with one small
coarse chopped onion, salt and pepper to taste.

I Large onions, coarse chopped
˝ cup palm oil
˝ cup vegetable oil
4 cups water
3 cups ground melon seed
3 packages frozen chopped spinach, thawed
˝ cup crayfish
Salt and African red pepper to taste
Directions
1. Sauté onions in palm and vegetable oil.
2. Add water and stock from meat and chicken. Bring to a
boil.
3. Add melon seed, salt and pepper to taste and bring to a
boil.
4. Boil 10-15 minutes on low heat.
5. Add meat, chicken, spinach and crayfish. Stir and
adjust for salt and pepper.
6. Bring to a boil and cook for 5 minutes on medium heat.

Tips for Egusi soup
1. Meat must include bones. Do not overcook the meat since
it will be slightly
cooked again. Goat meat must be tender.
2. I used a total 4-1/4 to 5-1/4 teaspoon salt and 3/4 to
1 teaspoon African red
pepper In meat, chicken and final soup).
3. More water can be added depending on desired thickness
of the soup.
